Ayoyo Soup is a Ghanaian green soup made with jute leaves and served with stew and tuozafi.
Today we walk you through how to prepare this Ghanaian soup, the ingredients used, and the various steps to take in preparing it.
Ingredients:
Ayoyo leaves (jute leaves): 100 kg
1/2 teaspoon of powdered potash
2 cups of water
Salt to taste
1 seasoning cube
chilly pepper to taste
4-5 tbsp. shrimp powder
Preparation:
Nicely pick just leaves (no stem allowed), then go ahead and wash properly with a lot of water to remove any sand left on it.
Pour 2 cups of water into a cooking pot and heat to a boiling point. Add the washed edu leaves, soak the half teaspoon of potash in half a cup of water, and filter into the pot (to soften the leaves). Cook for 3 minutes.
Let it cool for five minutes, then transfer it into a blender and pulse a couple of times. You will get coarse-ground leaves, not smooth-ground leaves.
Transfer back to the pot and add the ground crayfish, 1 seasoning cube, salt, and pepper to taste.
Allow to simmer for just 2 minutes and you are done with making ayoyo soup.
